Dancing to the beet

Reanna, you did it again. It was time for a good old salad after a couple of soup days, because nothing beats the crunch of a toothsome bit of greens. With seasonal flair, Reanna made up a mixed-greens salad with walnuts, roasted beets, apple, chinese pear, feta cheese and mint, with a killer cumin dressing (recipe below). The crunchy pear, the sweet beets – it was all made to be.

Magic cumin dressing:
3/4 cup fresh squeezed orange juice
3 tablespoons balsamic vinegar
3 tablespoons grated orange peel
1 tablespoon ground cumin
1/2 cup olive oil
1 garlic clove
